Ingredients: 1/4 cup organic butter, divided 2 tablespoons all purpose flour 2 cups organic milk 8 ounces shredded organic cheddar cheese 1/2 teaspoon salt 1/8 teaspoon ground red pepper 1 (10-ounce) package frozen broccoli, thawed and coarsely chopped 8 ounces elbow macaroni or other small pasta shape, cooked 1/4 cup fine breadcrumbs 1/2 cup grated organic Parmesan cheese Directions: 1. Preheat oven to 350 degrees F. Lightly grease a rectangular baking dish. 2. Melt 2 tablespoons butter in a large saucepan over medium heat, and whisk in flour. Cook, whisking constantly, for 2 minutes. 3. Add milk gradually, whisking constantly, for 5 minutes or until mixture thickens. Remove from heat. 4. Add shredded cheese, salt and pepper, stirring until cheese melts. Stir in broccoli and pasta. 5. Pour into prepared baking dish. Combine breadcrumbs and Parmesan and sprinkle over the top. Dot with remaining 2 tablespoons butter. Bake for 25 to 30 minutes.
